  • Destemmed fruit is crushed and then undgoes a five-day maceration
  • Must is pressed into French oak 2,500L foudres for fermentation with indigenous yeast

It spent five days on its skins before fermenting in foudre and aging for 12 months. The nose is striking in its vivid, herbal profile, and it's further energized by crystalline citrus aromas and the stony overtones that define the range. A slender, lively, mouthwatering palate seamlessly flows into a chiseled finish that recalls the nose's chalky, herbal character."
