"The Pithari project singles out one especially well-performing amphorae with fruit from a single vineyard that would otherwise go to the Tria Ampelia project. That amphora is bottled separately, and in the case of the 2023 Santorini Tria Ampelia Pithari 6, we have fruit from the village of Fira. These tend to be the most creative wines in the Paris Sigalas portfolio because he looks for something new with each vintage and seeks a new way of interpreting whatever that is. I asked him what his goal was with this wine, and his reply was "finesse." This wine is extremely elegant and linear, but the mouthfeel is also enhanced by glycerin and volume that adds texture and length. The finesse he speaks of comes through with floral notes of elderflower."
