"The Domaine Sigalas 2025 Santorini Assyrtiko offers a youthful and approachable expression of the variety with aromas of chamomile, confit lemon, quince and Mediterranean herbs, including sage. Compared to the estate's more ambitious bottlings, this wine is simpler and more immediate, emphasizing texture and drinkability over mineral complexity. The palate is rich, slightly oily and pleasantly textured, with enough acidity to maintain sharpness. Produced in 45,000 bottles from vines more than 60 years old rooted in the volcanic soils of Oia, where pumice, lava and pyroclastic materials shape the vineyard landscape, the wine ages on its lees for at least four months. First released in 1991, this is one of the earliest 100% Assyrtiko wines from Santorini, and it remains an important benchmark."

"The 2024 Santorini is a varietal Assyrtiko that aged for four months in stainless steel tanks ahead of bottling. Lemon zest, grapefruit and smoky elements are all brought to the fore, brightened by subtle herbal tones. Medium-bodied, sleek-lined and complex, the classic 2024 levels out with a delicately mineral finish."

"I sometimes forget how rich Santorini wine can be even with high acidity and its classic stony-mineral-citrus tension. This smells as rich as it tastes, rich in the sense of volume not in ripe fruit. Rich also in texture, almost chewy. It™s a powerful wine with perfect balance between intensity and freshness. Deep, almost chewy and very long. It™s not fruity but the fruit has given real presence and weight in the mouth. Santorini Assyrtiko is so distinctive and inimitable. The wine lingers on and on after you have tasted it. The wine may well age longer than I have suggested. (JH)"
