Rum

• Rum distilled in Oaxaca, Mexico, in the Sierra Mazateca Mountains
• Maestro Destilador José Luis Carrera
• 100% pressed sugarcane (Caña Dulce, Caña Morada, Caña Dura, and primarily Caña Criolla) organically grown on Carrera’s farm
• Crushed using a traditional sugarcane press (trapiche)
• Fermented 48 hours in open-air pine wood vats (tinas) with mesquite bark
• Distilled once using a small copper column still with 6 plates
• Tropical notes of lime zest, star fruit, and dried apricot balanced with pronounced vegetal notes of green olive, fresh grass, pickled cucumber, and peppermint, finished with a whisp of campfire smoke and a dash of brine
• 54% ABV
