- Sourced from the Damsteep Vineyard, in the Omihi subdistrict of Waipara Valley, North Canterbury
- This north-facing 140m-280m ASL hillside vineyard is planted on very dense clay (brown to orange in color) and inter bedded with sandstones and subordinate limestone horizons
- Planted in 2000, this site is BioGro Certified Organic as of 2017 and Demeter Certified Biodynamic as of 2023
- Hand harvested
- Whole punch pressed using a long and gentle press cycle
- The juice is then settled for 48 hours then racked to small, upright stainless-steel tanks
- Native fermentation
- Aged in the same vessels for three months with lees contact
- Hand and machine riddled from Sept. 22, 2025
- Disgorged in Oct 2025
