• Small batch pisco produced in the Mala valley of Lima, Peru
• Denomination of Origin (DO) Peruvian Pisco
• 100% Italia grapes grown by the Chumpitáz family on Fundo El Encontrón, 11 kilometers from the Pacific Ocean and 90 meters above sea level
• Grapes hand-harvested in 2023
• Distilled at Fundo Puente Viejo, approximately 7 kilometers from Fundo El Encontrón
• Master distiller Keith Diaz
• Spontaneously fermented using wild yeast
• Single distilled on a copper alembic still
• Rested for 2 years before bottling in food-grade polyethylene tanks that have been cured with the heads of previous distillation runs
• No water is added post-distillation
• Bright floral notes with hints of key lime and Granny Smith apple and a delicate, herbal finish
• Non-chill filtered; 41.7% ABV (ABV may vary batch to batch)

This is SUYO’s first Italia release made from grapes grown on the El Encontrón estate, located next to the Mala River, where the grapes are informed by sandy loam, an arid climate, and limited sunlight. Enjoy this spritely pisco on the rocks to contemplate the nuances of the aromatic Italia grape or sub it in for gin in an elegant Peruvian take on a classic Martini.
