- 100% destemmed fruit, 70% whole berry
- 27-day native fermentation in large open top vats with gentle twice-daily punch downs
- Each vat was individually pressed using a basket press
- Aged for 12 months in neutral 228L and 500L French oak barrels
- Vessels racked and blended into stainless-steel to settle for three months
- Unfined and unfiltered
