• 100% Pinot Noir
• Sourced from a single vineyard 1km from the winery where the soils are comprised of deep heavy silts with a thin layer of loess topsoil
• The nature of being a gravity flow winery allows grapes to be gently destemmed without pumping
• Long pre-fermentation soaks of 8-10 days
• 20% whole cluster fermentation
• Native yeast fermentation
• Punched down by hand up to 2 times per day with a total time on the skins of 22-24 days
• Aged for 16 months in French oak (25% new)
• No fining or filtering
