"The 2023 Pet Nat of Pinot Grigio Mackerel spent two days on the skins and two years en tirage and is pink in color from the color of the grapes. Pure acidity and effervescent ebullience mark the light-bodied, simple, but undeniably well-made wine, tasting of pink lemonade mixed with herbal black tea. It has brightness and energy and has a good dose of 2022 blended in during fermentation."
