"Fermented spontaneously in oak, this spent 12 months on its gross lees before tirage, then 36 months on lees under cork in what Marine Zabarino calls an ‘oxido-reductive terroir Champagne’ style. Hand-riddled, hand-disgorged, just 4,845 bottles made. Creamy hazelnut aromas with notes of lemon and the scent of apple pip. Lovely clarity, drive and chalky depth, an oak-kissed roundness with a markedly fine, creamy mousse. Without malolactic fermentation, this is a great blend of sumptuousness and verticality, and deserves more bottle age to reveal more of its depth."
