This expression is made from a rare subspecies of Agave americana unique to the municipality of Sahuayo, Michoacán, which was formerly referred to simply as “cenizo”—a term which describes the plant’s grey or “ash” colored leaves but is no longer allowed by the CRM to describe agave species other than A. durangensis.
