  • La Piòpa represents the Ghirlandina, the symbol of the city. It is a highly representative tower in the history of Modena, as it protected the “Secchia Rapita” (Stolen Bucket) taken by the Modenese after the Battle of Zappolino against Bologna
  • Harvested by hand and destemmed
  • 18 hour fermentation/maceration at cool temperatures to obtain rosé color and aromatics
  • Secondary fermentation occurs in autoclaves over a period of 40-50 days
  • Residual sugar: 5 g/L
  • Approximately 3000 cases produced annually
