- La Piòpa represents the Ghirlandina, the symbol of the city. It is a highly representative tower in the history of Modena, as it protected the “Secchia Rapita” (Stolen Bucket) taken by the Modenese after the Battle of Zappolino against Bologna
- Harvested by hand and destemmed
- 18 hour fermentation/maceration at cool temperatures to obtain rosé color and aromatics
- Secondary fermentation occurs in autoclaves over a period of 40-50 days
- Residual sugar: 5 g/L
- Approximately 3000 cases produced annually
