Primarily Mutsu, with Cox Orange, Kim, Gloster, and a touch of Belle de Boskoop • juice naturally concentrated in the winter cold • spontaneously fermented (a difficult first-ever for this cuvée) • aged in tank for six months before bottling • 130 g/L residual sugar • 15 g/L total acidity (!) • 9.5% ABV • deep apple and stonefruit sweetness balanced by astonishing saline acidity and length • suggested pairings: “cheese, desserts with apple and berries, foie gras. Meditation. Collecting. Fall and winter evenings. Commemorating a life new to the world, a life passed. Any decennial or centennial anniversary.”
