• Both pressed immediately, settled overnight, and then racked off gross juice lees
• Fermented in neutral oak barrique
• Aged in barrel, unracked on fine lees, for 9 months before blending and bottling
• Unfined and unfiltered (sediment expected)
• Free SO2 3 mg/L (Total SO2 28 mg/L)
• 380 cases produced
• 12% abv
