"Johannes Hirsch tends this vineyard in his hometown of Kammern, a parcel at the base of the Heiligenstein. Farming under biodynamics as a member of respekt-Biodyn, Hirsch ferments this wine without added yeasts and ages it in a combination of stainless steel and large-format oak. It feels generous as it drives through lemon-balm and white-rose scents, its herbal, floral energy lasting with a wasabi-like spice. This is powerful wine, its fruit focused by considerable structural tension, giving it the potential to age and a complexity of flavor that keeps expanding through the end. Great Grüner."
