• Barrel-aged American dry gin produced by Starlight Distillery in Starlight, Indiana
• 12 botanicals include juniper, cardamom, coriander, grains of paradise, cubeb berry, star anise, cassia bark, angelica root, lemon, lime, grapefruit, and orange
• Botanicals macerated in neutral grain spirit before distillation
• Distilled in an 80-gallon Christian Carl copper pot still
• Lightly aged in a combination of Starlight brandy and whiskey casks
• A floral nose carries aromas of citrus and summer fruit before transitioning to a soft, sweet palate of juniper, orange blossom, and vanilla with orange peel and baking spice on the finish
• 46.2% ABV

Starlight Distillery’s Simon’s 1794 Barrel Finished Gin is a unique variation of the distillery’s American Dry Gin, named for the founder of the Huber Estate, Simon Huber (born 1794). Crafted in small batches, this reserve expression receives additional layers of warming fruit and grain-driven spice through light aging in Starlight Distillery brandy and whiskey casks.
