• Maestro Mezcaleros: Maria Perez & son Jesus Pedraza Perez
• Produced in Michoacán, Mexico
• 100% Penca Ancha (A. cupreata)
• Cooked in a conical earthen oven & milled by hand with axe
• Fermented in a cubical masonry pit with 10–15 liters pulque per batch
• Distilled twice using a hybrid ‘Filipino style’ copper pot & wooden tree trunk still
• Compelling combination of notes including basil leaf, canned pineapple, nopal cactus, blue cheese, green peppercorn, green cardamom, fennel, and diesel/petrol
• 50% ABV (alcohol will vary from batch to batch)
