"With its lively, lacy mousse and well-cut acidity, this balanced Champagne would serve well as an aperitif, while its fine mesh and focused creamed apple, biscuit, preserved lemon and minerally brine flavors also recommend this to food. "The NV (2018) Brut Blanc de Blancs d'Aÿ is fabulous. It offers up copious scents of lemon confit, tangerine oil spice, mint and lightly honeyed top notes. Rich and resonant in the glass, with tremendous palate presence, the Blanc de Blancs d'Aÿ is one of the highlights in this range and also one of the most singular wines in all of Champagne. Chardonnay in Aÿ is so compelling. Best of all, the Blanc de Blancs, bottled as a NV but a vintage Champagne, is a fabulous value. Disgorged: March, 2022."
