This sparkling is produced from three varieties (Pinot Noir, Grüner Veltliner, Riesling) selected from different sites of the estate. The grapes are harvested and placed in small boxes then immediately pressed. After six months of élevage in cask, it is bottled. It then rests for about three years on the lees until it is hand riddled and then disgorged.

"The NV Brut Reserve is a blend of Grüner Veltliner, Riesling and Pinot Noir that was fermented in stainless steel and matured in large oak before bottling. The wine spent around 30 months on lees. Fresh green pear and pear peel join smooth notions of raw shortcrust pastry on the nose. The palate is fruity and juicy, with vivid, tingling freshness, energy and lively, smooth foam. This is a totally animating, vivid and bright apéro style. Dosage is 7 grams per liter. Disgorged: May 2024."
