• Single cask straight bourbon whiskey produced by Starlight Distillery in Starlight, Indiana
• Selected and bottled exclusively for Skurnik and the Manhattan area
• Barrel number 19-0057; barrel filled 2/25/19 and bottled 10/17/23
• Mash bill of 60% corn, 20% rye, and 20% malted barley
• Corn and rye are estate-grown and non-GMO; malted barley is locally sourced
• 7-day closed-top sweet mash fermentation in stainless steel
• Twice distilled in a Vendome brass and copper pot still
• Aged a minimum 4 years in a char level 2 barrel with toasted heads
• Non-chill filtered; bottled at a cask strength of 58.45% ABV

“This is the best holiday pie you could ask for. Big Red gum on the nose moves to crème brûlée and toasted pecan. On the palate, cinnamon hits heavy upfront but gives way to almond tart. The flavor bounces back and forth from almonds to custard to pie crust. The proof is high at 116.9, but it drinks much softer than that. I didn’t feel compelled to add ice or water, but a few drops open it up to reveal a touch of butterscotch and red apple skin.
