Amaro Fields Brucato
  • Bitter digestif produced by Brucato in San Francisco, California
  • Botanicals include artichoke leaf, toasted dandelion root, beet root, fenugreek, orange peel, cinchona, walnut, coriander, dill seed and weed, fennel seed, and rhubarb root
  • Base of grape distillate from Napa and Sonoma Valley
  • Whole botanicals, dried and fresh, are incrementally added to the base distillate for a single-batch maceration; the infusion is also briefly rested on cubes of toasted American oak
  • The infused spirit rests for six months in stainless steel before it is sweetened with cane sugar and brought to proof
  • Aromas of fenugreek seed, dill, and coriander introduce a blend of bitter artichoke leaf, red beet, and rhubarb on the palate with notes of toasted caramel and celery seed
  • Allergen advisory: Nuts incorporated post distillation
  • No added coloring
  • Non-chill filtered; 35% ABV

The fourth release in Brucato’s amaro-based love letter to California agriculture pays homage to the farming community that plays such a central role in the country’s food ecosystem. Highlighting flavors of artichoke, beet, and rhubarb, this is an earthy West Coast bitter liqueur that gives Cynar a run for its money.
