Trust us.) This Iberian take on the Malaysian classic is lower in alcohol, deliciously umami, and versatile for any season. UPUPA EPOPS .5 oz lime 1.5 oz pineapple .5 oz Lustau Pedro Ximénez ‘San Emilio’ Sherry 1/2 barspoon Lustau Riserva ‘1/24’ Vinagre 1 oz Lustau Paolo Cortado ‘Península’ Sherry .75 oz 50/50 split Lustau Vermut Rojo and Forthave RED Aperitivo 2 dashes Angostura bitters Shake with vigor and strain into a rocks glass with a large cube.
