"Albillo Criollo is more commonly found on La Palma, but also crops up in isolated spots on Tenerife. Fermented and aged in equal parts stainless steel and old wood, the latter with lees stirring, this has enticing aromas of honeysuckle and wet stones, cruncy, mouth-watering, Aligot,-like acidity and a textured mid palate.
