"Albillo Criollo is more commonly found on La Palma, but also crops up in isolated spots on Tenerife. Fermented and aged in equal parts stainless steel and old wood, the latter with lees stirring, this has enticing aromas of honeysuckle and wet stones, cruncy, mouth-watering, Aligot,-like acidity and a textured mid palate. "The 2022 Finca La Habanera Albillo Criollo comes from younger trellised vines planted by the father of the current generation at 600 to 700 meters above sea level on steep slopes. It fermented in closed barrels with indigenous yeasts and stainless steel and was kept with the lees for six months. They were looking for the varietal profile, and it's a little more aromatic than List n Blanco but keeping the stony, volcanic sensation. It's gentle and fruit-driven, with white fruit and flowers, some fennel and herbal aromas and good freshness. It has good ripeness, 13.5% alcohol, a pH of 3.22 and 6.76 grams of acidity. 2,500 bottles produced. It was bottled in November 2024."
