- Distilled in a 30-foot high, 18-plate Vendome column still and custom Vendome copper doubler

Chattanooga Whiskey’s Cask 111 Proof expression has the same “Tennessee High Malt” mash bill, fermentation protocol, and distillation regimen as its 91 Proof Straight Bourbon. The difference between the two bottlings is in the barrel selection. Whereas fruit-forward barrels are earmarked for the 91 Proof (and subsequently dumped into a solera finishing barrel), oak-influenced barrels are earmarked for the 111 Proof and bottled directly. Sourced from a single fermentation, this cask-strength expression amplifies the caramel and malt notes of the whiskey and introduces distinctive elements of dark chocolate, dried cherries, and baking spices. A greater emphasis on toasted oak—plus the intensity of the higher proof—result in a top-shelf, cask-forward sipper that belies its modest price tag.
