- The nose is floral and fresh, revealing notes of confectionary almond, flinty grapefruit zest, fennel, and white chocolate. Citrus and dairy converge on the palate, which broadens to tangy lemon cheesecake spiked with fresh berries and a few flakes of Maldon salt. Notes of toffee and a hit of fresh mint lift towards a light, pretty finish of white flowers and fresh grape.

If you were to custom craft a recipe for producing a great whiskey, it would be hard to do better than the Flintlock releases from J.J. Corry. Elegant, triple-pot-distilled Irish malt, having first spent more than 2 decades in ex-bourbon barrels, is carefully blended and finished for 18 months in a Fino sherry cask, breathing the salt spray and heather of the western Irish coast’s Wild Atlantic Way for the final leg of its journey. Simultaneously floral, fresh, and light, but with the layers of expressive flavors born of long aging, it’s a top-shelf sipper blessed with an affable moreish quality. Akin to its firearm namesake (a treasure drawn from the bosom of the McGuane farm), it is an exemplar of the bonder’s craft.
