- The fruit is sourced from two farms: Jakkalsfontein in the Swartland (75%) and Groote Post in Darling (25%)
- In the Swartland, the vines are planted on deep granitic, red soils called “koffieklip” in Afrikaans as the gravels resemble roasted coffee beans
- In Darling, the vines are planted on a steep iron-rich clay-loam (Hutton form soil) slope overlooking the Atlantic Ocean
- Hand harvested
- Fruit is allowed to rest overnight
- Whole-bunch pressed directly to vats without settling
- Indigenous fermentation in neutral 1,200L sherry vats
- Racked, topped, and then aged on it’s lees for six months before bottling
