"Panos Sarris' eponymous winery is located in south-west Cephalonia. A former sommelier, Sarris established the winery in 2016 with just a few barrels of wine. Today it is a respected name, particularly for Robola. This is made with hand-harvested grapes from two terraced vineyards at 700m, planted in 1980 and 2000. It's fermented in steel but feels more savoury than fruity, with notes of sesame seed, peanut and candle wax overlaying ripe Golden Delicious apple, ripe citrus and yellow plum. Firm, bone-dry and concentrated, this drinks like serious Chablis."
