Sansho pepper, sometimes referred to as Japanese prickly ash, is a traditional Japanese culinary ingredient made from the dried berries of the sansho tree. While similar to other prickly ash peppers such as Sichuan pepper, sansho peppers have a very mild heat and a bright citrusy flavor in addition to their signature tingling or numbing sensation. For their Sansho Bitters, The Japanese Bitters Company uses Budo Sansho peppers, a specialty variety known as “grape pepper” for its grape-like clusters of fruit. Try using these bitters in place of orange bitters or chili bitters, or to add bright, citrusy spice to anything from sours to Martinis.
