- 52% Syrah, 25% Grenache Noir & 23% Cinsault
- From a single parcel planted on distinctive, schist and quartz-rich slopes on Roundstone Estate, 300-400 MASL
- The vines are trained as bush vines as well as stok-by-paaltjie (vine by post) and are planted along the natural contours of the mountain while coexisting with wild fynbos
- Carefully picked during the cool daybreak of early February
- 100% whole bunches and then gently trodden directly into 500L open-top barrels to initiate fermentation
- Only gentle hand punch-downs employed, just enough to keep the cap moist and ensure a delicate extraction
- After a slow, six-week fermentation and maceration, the wine was pressed and returned to the same barrels
- Aged for 22 months in 500L French oak barrels
