Riesling 'Elgin'

• Riesling, planted in 2006
• West-facing slope and the densely planted vines are seated on ancient Bokkeveld shale soils; rich in clay
• Hand harvested in the early morning and chilled even further overnight
• 100% destemmed fruit before loaded by gravity into the press
• 6 hour skin contact was done in a sealed press, before gently pressed
• Two days of settling took place in concrete tanks before racked to stainless steel vessels for fermentation, which lasted 2 months
• Bottled after 11 months of lees contact, with another 9 months of bottle aging
• 3,200 bottles produced
