Aged following a biological aging in the cool and humid air of the port town of El Puerto de Santa María, where the flor grows in ideal environmental conditions. Pale straw color, dry, light and smooth. This Fino is laced with scents of the sea and profound “flor” aromas. Clean and fresh, with a slight taste of tangy yeast.

"Almost as creamy and refreshing as a Manzanilla, this Fino is focused on mineral notes and vibrant acidity, which refresh the white fruit flavors. A young Fino with five years of aging under flor in El Puerto de Santa María, this has enough structure and firm acidity to evolve in bottle for a year or two, an unusual distinction for this style of Sherry, which is normally designed to be enjoyed on release."
