Plum Eau de Vie, Hans Reisetbauer

Plums are harvested in September and then mixed to a mash before the stones are carefully removed. Fermentation takes place over 14 days and then the mash is distilled twice. It takes 10 kg of plums to produce just one liter of this vibrant eau-de-vie that displays hints of custard and white flowers. 41.5% ABV
