"The NV Palo Cortado Viejo C.P. is sourced from a Palomino single vineyard planted in the Macharnudo area in Jerez. It underwent barrel fermentation and aged under a veil ofÿflorÿin an oxidative process using theÿCriaderasÿandÿSoleraÿmethods. This unique wine presents classic Palo Cortado aromas, combining saffron, peas and mint with caramel, oak and cashew, in an Amontillado-like bouquet. Dry, lean and chalky, its delicate palate lingers extensively‡a delightful, saline wine."

"Brown sugar, salted almond, and walnut on the nose, together with hints of toffee and sourdough yeast. Tangy and intense on the palate with medium to full body and a long, savory finish. Concentrated, after a lengthy aging of around 25 years. Drink now."

"The June 2025 bottling of the NV Palo Cortado Viejo C.P. VOS, now officially classified as a VOS, Very Old Sherry, at least 20 years of age, was produced from Palomino from the Macharnudo Alto vineyard and replenished with selected casks of Fino Inocente and Amontillado Tio Diego. It was traditionally aged in the Calle Ponce (Ponce Street), hence its name, C.P. It's an old wine averaging around 25 years of age, with 21% alcohol, reflecting concentration and evaporation, and displaying a dark amber color and a nutty nose with a hint of varnish, with complexity and nuance, quite integrated, polished and sleek. This seems to have gained in complexity and depth, with the elegance you expect. Only 650 half-liter bottles were filled in June 2025."
