More about the Sacristía bodega: La Sacristía is a small cellar within La Casa de Cilla. Built in 1782, this Andalusian-style building was at once a palatial home, a warehouse, and an administrative center for tithes paid to the church until 1841. La Sacristía is situated next to a Moorish patio of graceful arches and columns, and holds some of the finest and rarest palo cortado in existence—much of which is over one hundred years old.

"Aromas of saddle leather, salted caramel and toffee unfold alongside subtle oxidative notes. The palate is concentrated and luscious, with incisive, balanced acidity derived from volatile compounds that lift and define the wine's richness. Layers of roasted nuts, dried orange peel and a touch of bitter almonds on the mid-palate, leading to a persistent finish. This will hold, but can be enjoyed now."

"Barbadillo is somehow a specialist in Palo Cortado, and they now offer a younger, gentler and more straightforward NV Palo Cortado Criadera Selection from the Tío Río solera. It's an elegant oxidative wine, with an average age of 14 years, with a peachy nose, gentle and tender, but with a more saline and sharper palate with a bitter twist in the finish. It has an Oloroso nose and an Amontillado palate. 906 bottles were filled in March 2024."
