"Bottled in November 2023 after nearly 30 years in cask, this edition of Lustau,s justly famous'vintage sherry" was aged longer than the customary 15†20 years. I feel this has helpedthis unique wine develop a more complete character. It is a 100% Palomino harvested latebut not sun-dried as most other sweet wines in the region, and the fermentation is stoppedby fortification, somewhat like Port wine. This special vinification helps to maintain thearomatic purity of Palomino with no heavier figgy, jammy notes from either Pedro Xim,nezor Moscatel. Initially reticent, it opens with a beguiling complexity of white grape gel,e,dried apricots, toasted almonds, dried rosemary, and surprises with the most invigoratingacidity on the sweet but not sticky palate. With the freshness of Atlantic Palomino and anOloroso-like woody, nutty edginess, this is really the perfect sweet sherry."
