- Planted on Table Mountain sandstone and granitic soils

- Fruit is allowed to rest overnight
- Whole-bunch pressed
- Alcoholic fermentation is completed in 500L to 1,200L vats and fortified with a neutral grape spirit before malolactic fermentation can occur
- Racked for clarity then aged for nine years oxidatively in neutral 500L barrels
