"Doyard's 2019 Extra Brut Oeil de Perdrix is such a compelling and distinctive wine. Crushed flowers, mint, kirsch, tangerine peel and a kiss of exotic spice all grace this layered, beautifully understated Rosé. The Oeil de Perdrix is a contemplative Champagne for the dinner table. The blend is 75% Pinot Noir from A and 25% Chardonnay from Avize, with the Pinot seeing a light press"the old-school technique that yields pale-colored Rosés known as Oeil de Perdrix. Dosage is 3 grams per liter. Disgorged: October 31, 2023."

"Informed by high-maturity Pinot Noir sourced from a vineyard in the village of A -Champagne, which is pressed slowly and gently, delivering a subtle pink hue, and complemented by Chardonnay from Avize, Doyard™s 2019 Extra-Brut Grand Cru Millésime 'il de Perdrix has turned out very well. Vinified in 228-liter barrels of different ages and disgorged in October 2023 with three grams per liter dosage, it wafts from the glass with aromas of orange zest, roses, sweet berries and spices. Full-bodied, concentrated and enveloping, with ripe but vibrant acids, delicate phenolic structure and a pillowy mousse, it concludes with a long, perfumed finish. It™s a vinous, gastronomic Champagne."

"This rosé Champagne is a pale tawny hue, with crisp acidity and a lacy mousse supporting a richly aromatic range of marzipan, dried apricot and white cherry fruit, lightly charred toast, lemon thyme and pink grapefruit pith notes.
