Morishima Shuzo 'Yamada Nishiki - Modern Classic' Junmai Ginjo Sake

Junmai Ginjo Sake Yamada Nishiki Modern Classic Morishima

Brewery: Morishima Shuzo • Prefecture: Ibaraki • Rice: Yamada Nishiki milled to 60% •  Yeast: Kyokai #901 •  Water: Hard water pulled from subterranean river • Sake Meter Value: +2 • Acidity: 1.8 • ABV: 15%

  • An emblematic modern sake with aromas of fresh strawberries, bracing acidity, glossy texture but balanced by a classic umami body. Bottled extremely fresh, will show a slight effervescence upon opening
  • With the brewery located just steps from the ocean, sea breezes infuse the fruity sake with a faint salinity.
  • Pair with wide range of seafood, shellfish like oysters and crab, as well as meatier fish like mackerel, tuna and swordfish.

The Morishima family has been making fine sake since 1869. The front label shows the Oya stone that survived the collapse of the original Morishima stone warehouse that collapsed in the Tohoku earthquake of 2011. The brewery keeps it as a memory of the past, a symbol of resilience, and a reminder of hope for the future.
