"The 2025 Riesling Nieder-Hilbersheimer Honigberg Grosses Gewachs is from a mix of limestone, iron ore and iron-rich loam. It was made in one 780-liter barrel. This has creaminess from the off, with a lovely flicker of something savory, perhaps fruit, perhaps herb; it is hard to capture. The palate is superbly linear and utterly dynamic yet also creamy. Underneath it all, an incredible saltiness calls, makes the mouth water and wills you to take another sip. The finish is like savoring fruity deliciousness as it soaks into limestone.
