Heirloom Garden Dill Aquavit

• Dill aquavit produced by Norden Spirits in Chelsea, Michigan
• Botanicals include dill stalks and seeds, coriander, whole fennel, nasturtium flowers, calendula flowers, lovage, yarrow, and angelica root; all botanicals are organically grown and single origin sourced in either Michigan or California
• Base distillate is 100% organic, Midwest-grown neutral corn spirit
• Dill is vapor distilled within hours of local harvest; the remaining botanicals are separately distilled in a copper pot
• The two distillates are combined and proofed with filtered water
• A bouquet of savory herbs bloom on the nose and palate; dill is the dominant aroma, crisply complemented by fennel frond, anise, and licorice. The first taste is bright with citrus peel and gentle pepper and as those notes fade, they are replaced with a long finish of freshly cut dill and cracked coriander seeds.

Cultivating a variety of dill originally transplanted from Denmark, Norden harvests these giant (4–6 feet!) flowering stalks only twice each summer and distills them within hours to capture their savory-sweet, verdant character.
