- Other key botanicals include juniper berries from Bulgaria, basil flower, rosemary, and lime (harvested by small farmers in Colchagua), green chili, (known in Chile as “Ají Cristal”), pink molle (a type of wild-foraged pink pepper), plus coriander, cardamom, and angelica root
- Provincia employs 2 copper pot stills (one 400 L and one 600 L) fabricated by a master coppersmith near the distillery; botanicals are distilled separately or in groups through a combination of maceration and direct distillation, steam infusion, and cold distillation via rotary evaporator (Rotavap) for delicate botanicals like flowers and soft fruits
- Proofed down with pure glacier water sourced from the nearby Universidad Glacier
- On the nose, a clean sensation of wet stone leads to cedar, piney sap, and notes of clove. As the gin opens, citrus zest, blue flowers, and berries merge into green pineapple with an edge of spice, creating a round and lush the palate.
