- Hand harvested
- Fruit is allowed to rest overnight
- Whole-bunch pressed
- Alcoholic fermentation is completed in 500L to 1,200L vats and fortified with a neutral grape spirit before malolactic fermentation can occur
- Racked for clarity then aged for seven years in neutral 500L barrels
- The sweet component (Chenin or Muscat d’Alexandrie) is aged oxidatively neutral 500L barrels
- Blended and bottled
