- Fruit is allowed to rest overnight
- Gentle pressing, only free run must is used for Fino/Amontillado, hard pressed must is used for more oxidative styles
- Settled for 12-24 hours
- Alcoholic fermentation is completed in 500L to 1,200L vats and fortified with a neutral grape spirit before malolactic fermentation can occur
- Aged four years under Flor only steps from the Atlantic in their open-air cellar
- The flor yeast is from Nietvoorbij in Stellenbosch and includes three Spanish strains

"The Saldanha Wine & Spirits Co. NV Fino Select Kandelaar No. 8 is the estate,s second Fino bottling, produced from a blend that includes Palomino, Chenin Blanc and Sauvignon Blanc aged under flor. Pale straw in color and vinous in character, it opens with classic flor-derived aromas of raw almond, fresh dough, chamomile and sea spray. Subtle notes of nougat, toasted cashew and a faintly savory, almost Turkish delight-like nuance add intrigue. The palate is dry and brisk with fresh acidity, carrying flavors of green apple skin, salted nuts and citrus pith. Limited to 1,100 bottles, this is an elegant, easy-flowing interpretation of the Fino style with clarity and a 15.5% alcohol content."
