"The 2017 Brut Nature Essence de Billiot is 100% Pinot Noir from the Clos and Feuchère lieux-dits in Ambonnay, vinified in neutral oak with no malolactic fermentation. Kirsch, white pepper, slate, chalk and mint all come alive in the glass. This is an especially vibrant, saline style for Ambonnay, no doubt shaped by finishing with no dosage. There's a ton of character for readers to discover here. Give this a bit of air and watch it soar. Disgorged: July 19, 2024."

"The 2016 Extra-Brut Essence de Billiot (100% Pinot Noir) is a very pretty wine. Dried pear, hazelnut, chamomile and pastry notes suggest that the 2016 has reached a plateau of maturity. I would not push my luck too far on aging, as there is already a bit of resolution here. Even so, the 2016 has plenty to offer, especially for readers who admire Pinot Noir from Ambonnay.
