"The unoaked and peppery 2021 Edad Moderna Cabernet Sauvignon shows restraint and freshness and opens up nicely in the glass to reveal varietal typicity, moderate alcohol at 13.5%, purity of aromas and flavors and the textbook grainy tannins from the variety. It has black fruit and notes of freshly cracked peppercorns and is a lot more austere and with contained ripeness than the 2018 I tasted last time. It fermented and matured in raw concrete for some eight months. It has a medium to full-bodied palate with textbook Cabernet tannins and the chalkiness from the soils. It's balsamic and has freshness despite not having very high acidity. 4,000 bottles were filled in October 2019."
