"Demonstrating how mainland Assyrtiko often leans toward a fruitier profile than its island counterparts, the Domaine Skouras 2025 Assyrtiko Wild Ferment offers attractive aromas of orchard fruit and citrus framed by subtle mineral notes and chamomile. The grapes are harvested at moderate ripeness, around 13.5% potential alcohol, to preserve freshness. Whole-cluster pressed and fermented with indigenous yeasts, the wine spends four to six months on the lees, adding texture and mid-palate volume. The palate is defined by taut tension and a distinctly rocky mineral character that recalls crushed quartz rather than the pumice-driven profile often associated with Santorini. Fresh and focused, this wine highlights a different but compelling expression of Assyrtiko."
