- Aromas of tapioca pudding and charred cinnamon stick introduce a lively palate of brandied red fruits (cherry, plum), toffee, and buttered toast with a hint of stemmy herbs, finishing long with Red Hots candies
- Non-chill filtered; bottled at a cask strength of 43.1% ABV
Located at the base of the Andes Mountains, Pampas de Ica vineyard and winery in Ica’s Santiago District is 70 kilometers from the Pacific Ocean and 400 meters above sea level. In this extremely arid climate, the Carpio family hand harvests grapes grown in soil composed of sand, clay, and loam to make compelling pisco. But for this small batch from SUYO’s Exploratory Series, they go one step further, aging the brandy in French oak (that can no longer be called pisco once it sees barrel influence), resulting in a distinct expression that calls to be contemplated neat or mixed in restrained cocktails, such as a Capitán (a Peruvian take on the Manhattan).
