- Mostly Palomino with Chenin Blanc, Sauvignon Blanc, Verdelho, & Colombard

- Fruit is allowed to rest overnight
- Gentle pressing, only free run must is used for Fino/Amontillado, hard pressed must is used for more oxidative styles
- Settled for 12-24 hours
- Alcoholic fermentation is completed in 500L to 1,200L vats and fortified with a neutral grape spirit before malolactic fermentation can occur
- Aged in neutral oak for 18-20 months at the coastal cellar under Flor until the veil naturally fades, then aged oxidatively in neutral 225L oak barrels
- Some components aged at their open-air coastal cellar, some at the Swartland Farm
- The flor yeast is from Nietvoorbij in Stellenbosch and includes three Spanish strains

"The Saldanha Wine & Spirits Co. NV Amontillado No. 11 is aged under flor for 18†20 months before the veil naturally fades, followed by oxidative maturation for a total of seven years in cask. Deep dark gold in color, it opens with layered aromas of toasted hazelnut, walnut skin, almond paste and dried chamomile, underscored by hints of baked apple and salted caramel. The palate is supple and creamy with lower, rounded acidity, allowing the nutty, savory spectrum to expand gracefully with air. With only 400 bottles produced, this is a quietly powerful wine that gains breadth and textural depth over time, very much inspired by the classical Amontillado mold. The aging window should span the next 25 years, given its current stability."
