Vallet Amaro
Founded by French émigré Henri Vallet in 1891, Royal Vallet produces a range of liqueurs inspired by Italian amari in the city of Texcoco, just fifteen miles northeast of Mexico City, using domestically sourced Mexican botanicals.
Henri Vallet began crafting his bitters after immigrating to Mexico from France during the brief colonial reign of Maximilian I, an Austrian archduke appointed Emperor of Mexico by Napolean III. Though Maximillion was overthrown and executed by firing squad three years after his ascent, Vallet chose to remain in Mexico, and by the 1880s, had emerged as Mexico City’s preeminent distiller of liqueurs and elixirs.
Today, Fernet Vallet and Amargo Vallet are crafted by Ingeniero Jorge “Chicho” Rodriquez according to Monsieur Vallet’s original formulas, including the addition of a new aperitif inspired by classic Italian red bitters.
