• Distilled twice using a “viejo” still, a hybrid copper pot with a conical wooden chamber above and an external copper condensing arm

While the term ‘Verde’ is employed widely to describe strains of maguey with particularly vibrant green hues, in the case of Agave salmiana, this could describe the profile of the spirit just as easily as the color of the pencas (leaves). The Simental family only occasionally distills Verde, with Lamata having bottled batches only a handful of times in the past decade; more’s the pity because this is among the most joyful, refreshing, and approachable mezcales we’ve tasted in memory! Bold garden-fresh notes of chlorophyll, pepper, white flowers, watermelon hard candy abound, with a saline-mineral note that maintains a crisp sense of tension throughout the palate. Just superb.
